A high sided fry pan is ideal for sautéing. Sautéing food means moving food around in the pan while frying it. This cooking process requires very little oil. This style of pan is similar to the frying pan, however, the sauté pan is not as shallow as the frying pan and it usually has deeper edges. This type of pan is perfect if you want to sauté veggies or tender cuts of meat.  For delicate fish the sauté pan with nonstick is a favorite among chefs.
