Leg of Lamb

(1) Leg of Lamb (3 1/2-4 lb)

2 TB extra virgin olive oil

3 TB Herbs de Provence Blend

5 Cloves cut into slivers

Fresh Rosemary for garnish

(Optional Salt/Pepper to Taste)


In a small bowl, stir together the olive oil and herbs de Provence.  Rub the mixture all over the meat. Using a short knife, make 20-25 deep slits in the meat, spacing evenly.  Insert the garlic slivers.  

Place the leg of lab in the pan and roast for 15 minutes at 400 degrees.  Reduce the oven temperature to 350 degrees until the instant read thermometer in the thickest part of the late reaches optimal temperature for appropriate finishing.  Depending on how well done the leg of lamb will be – timing should be between 35- 60 minutes at 350 degrees.

125 degrees for rare

130-140 degrees for medium

150+ degrees for well done.

Reserve the pan drippings for use in other side dishes.

Arrange on a warm serving platter and garnish with rosemary sprigs.  Serve immediately.

Street Tacos

     The Seasoning:   Chipotle Classic

    

     The Tacos:

       2 pounds slab bacon (Bacon Freak Bacon)

       20 small corn tortillas, warmed

       1 medium onion, chopped

       1 bunch cilantro, chopped

       1 complete envelope Chipotle Classic Blend

       

        

       The Creamy Cilantro Sauce

       1 cup sour cream

·       1 chipotle pepper, chopped

·       1 bunch cilantro, chopped

·       Juice of 1 lime

·       1 clove garlic, chopped

·       1 teaspoon salt

Instructions:

Dice the slab into 1/4″ chunks and coat with the chipotle rub until well combined.  Place in a large skillet and cook over medium-low heat for about 15-20 minutes until bacon chunks are cooked through and start to caramelize.

To make the cilantro sauce, combine all ingredients. The mixture should be just thin enough to pour.

   Serve a heaping spoonful of chipotle bacon on each warmed corn tortilla, topped with a sprinkling onions, cilantro, and a drizzle of creamy cilantro sauce.
