Mediterranean 15 Bean Salad pressure cooked in 15 minutes.  Hurst’s 15 Bean Soup dried beans pressure cooked with a classic Greek dressing is a healthy alternative for summer entertaining.  Super easy and delicious

Ingredients

  • 1 bag Hurst’s 15 Bean Soup Soak the night before
  • 2 juice Juice of 2 Lemons
  • 2 TBLS Crushed Garlic
  • 1/2 cup Avocado or Olive Oil
  • 2 cups Halved Cherry Tomatoes
  • 1 who Cucumber diced
  • 1 bunch Scallions Diced
  • 1 bunch Flat Leaf Parsley Chopped
  • 1 Cup Feta Cheese
  • 1 Tsp Salt and Pepper to Taste
  • 1 TBLS Dried Oregano

Instructions

  1. Soak Hurst Beans Overnight.  Rinse drain, repeat. Pressure cook dried beans snd 6 cups water on high for 15 minutes.  Drain and refrigerate.  Mix together Greek Dressing.  Combine and enjoy!
