Ingredients
- 1 bag Hurst’s 15 Bean Soup Soak the night before
- 2 juice Juice of 2 Lemons
- 2 TBLS Crushed Garlic
- 1/2 cup Avocado or Olive Oil
- 2 cups Halved Cherry Tomatoes
- 1 who Cucumber diced
- 1 bunch Scallions Diced
- 1 bunch Flat Leaf Parsley Chopped
- 1 Cup Feta Cheese
- 1 Tsp Salt and Pepper to Taste
- 1 TBLS Dried Oregano

Soak Hurst Beans Overnight. Rinse drain, repeat. Pressure cook dried beans snd 6 cups water on high for 15 minutes. Drain and refrigerate. Mix together Greek Dressing. Combine and enjoy!
